Chef Giovanni DeNigris is a world traveled chef, born and raised in Mola Di Bari – Puglia.

After years of experience he traveled around the world's most famous gourmet festivals and he decided to give Chicago a try.

Chef Giovanni DeNigris opened and operated Trattoria Trullo (Evanston), Trattoria Trullo (Lincoln Square), Macello (West Loop) but Osteria Trulli is all Chef Giovanni DeNigris ever wanted to do. He let himself inspired by Pugliese Rustic style and created a small rustic restaurant with 50 seats in Arlington Heights.

This restaurant represents Chef Giovanni 100% from the authentic food, décor, floor plan to the kitchen dressing, and all the small details.

CUCINA POVERA means the poor peoples food back in the old days. Today's version is a more emncipated version of Cucina Povera.
Where the food was fresh from the local farm (tomatoes, artichokes, fava beans, fennel, pepers, cine di rapa, cime cicorie), pasta was home made from drum wheat flour.
Fish fresh from the Adriatico sea (anchovies, mussels, sea bass, cuttlefish, octopus, sea urchins, etc).

The region produces vast quantities of almonds used and combined with figs, fresh ricotta and sweetend with honey and vin cotto di fichi.
